Broccoli Souffle'

This is one of my favorite recipes as I love broccoli, could eat mayonnaise out of the jar with a spoon and adore eggs.  Not exactly easy on the hips but I don't make it everyday!

3 Cups broccoli, chopped, cooked and drained
2 T. butter, melted
2 T. flour
1 Cup mayonnaise (don't use Miracle Whip in this one.)
3 Eggs, slightly beaten
1/2 Cup milk

After the broccoli is cooked crisp tender and drained add the butter to hot empty pot to melt.  Add the flour to the melted butter to combine.  Stir in the mayonnaise and add the broccoli.  Stir in the broccoli gently as not to crush it.  Once the mayonnaise mixture is incorporated completely add the eggs and milk and stir.

Pour into a greased 9 X 13 pan and bake in a preheated 350 degree oven for 30 to 45 minutes.  The edges will begin to brown slightly and the casserole will be set.
